Chewy Protein Bars

Ingredients
- 1 cup organic dates (pitted)
- 1/2 cup organic sunflower butter (SunButter Sunflower Seed Spread without sugar)
- 1 1/2 cup Cha’s Organics coconut milk
- 1 tbsp organic vanilla extract
- 1 scoop of your protein powder (Sunwarrior protein powder is Julie’s recommended brand)
- 1/2 cup Camino Natural cocoa powder
- 1/2 tsp salt
- 2 1/2 cups organic oatmeal
- 1/2 cup Camino Bittersweet (71% cocoa) chocolate chips
- 1/2 cup organic dried cranberries
Directions
- Mix the following ingredients together in a blender on high speed: dates, sunflower butter, coconut milk, vanilla, protein powder, cocoa powder and salt
- Combine in a bowl the remaining ingredients: oatmeal, chocolate chips and cranberries
- Mix all ingredients together and create a rectangle block on baking parchment paper or in a dish, bake 15 minutes at 350 °F. Cut into squares. Enjoy immediately, refrigerate or freeze.
